Stewed, of course, lost its former strategic importance, which had a couple of decades ago. However, for some categories of humanity it remained important. To them, first of all, include hunters, tourists, fishermen, that is, those who are in nature for a long time, in "wild" conditions. And if the traveler does not want to eat for a few days only porridge, he will have to take a stew with him.
No doubt, you can get by and buy. But it is usually allowed all sorts of scraps, demand and low-grade meat. And the degree of its freshness is often in doubt. So if a person does not want to lose stomach, he will have to learn how to cook a stew at home, to be completely confident in the products that he takes to places remote from civilization.
What kind of meat is suitable
In principle, any: beef, chicken, pork, rabbit or lamb. You can also mix several types. The main condition - it must be fresh. Will go and chilled, but in no case frozen. The fillet is bought - in large pieces or already sliced
Selection and preparation of dishes
The weakest "place" for stew - its storage. Therefore, it is important to properly sterilize the containers in which it will be rolled. This can be done in any way - by boiling, followed by drying or calcining in the oven. Sterilize not only the banks, but also the lids, so it's better to take the last metal( or those that are rolled up by a machine, or with a twist). So that they do not rust when stored, they are greased from the outside. Suitable and heat-resistant plastic, such that they are closed hermetically - they are also boiled or calcined.
Sometimes for the packaging of stews milk bags are used, which are covered from the inside with foil. But this method assumes a rather rapid use, since it is impossible to achieve special sterility from them, and you can not close them sealed. In some cases the stew is folded in small aluminum cans, but the claims to them are the same. For long storage, still choose glass jars, since cooking a stew at home, spending food, time, and then losing the result of labor - it's very insulting.
The simplest method of
The most common and simple recipe for stew in the home is the following. Take fresh meat, salt, lard( in a ratio of 1 kg - 1 teaspoon - 200 g), bay leaves and peppercorns. If you have pork - fat is excluded. The meat is cut large, salted, and spices are added( if desired). In the sterile cans, put on the bottom are a laurel and pepper, on top - meat, but you need to make sure that fatty slices are alternated with lean. Salo( or pork fat) is melted, and containers are poured into it. The pan is generously sprinkled with coarse salt, filled with utensils, and the sheet is placed in an unheated oven. After that, it warms up to 200 degrees, and the banks in it cost about three hours, and then roll up with sterile lids.
If you have beef stew, remember that such meat during cooking decreases in volume, so that as it subsides, you will have to report it from a specially designated can.
At the heart of - quenching
The main ingredients and their number are the same. However, the cut meat is not laid out on cans, but is placed in a salted form in a dry pan. Water does not top up! The dish is put on the smallest fire for four hours( if there is a lot of meat, then all six). The juice will be extracted from the meat, in which it is quenched. To not stick to the bottom, you should periodically mix the contents of the container. About two or three hours later, finely chopped half of the fat is introduced( it is required from a stew of beef, mutton, poultry or rabbit), which will slowly be melted. At the very end, spices are added - at least laurel and peppercorns. No recipe for stew in the home does not include onions and garlic - from them the meat quickly becomes unsuitable. In hot form, the product is laid out on the sterilized jars, the second half of the fat is melted, which is poured into the stewed stew. The tanks are closed and cleaned into the cellar.
Chops in the jar
A very peculiar way of how to cook a stew at home. For a kilo of meat, 50 g of fat, 6 laurel leaves, 2 small spoons of salt and 1 - black pepper, this time ground, are taken. Meat in large pieces fights off from two sides, on the bottom of the container, where the workpiece will be stored, put two-thirds of the laurel, and on it - salted and peppered "chops"( as tight as possible). The judge must choose high. Salo is finely chopped and laid out from above, on it - the rest of the laurushka. Banks are placed in a cold oven( at the very bottom), which will gradually heat up to 180 degrees. The necks of the dishes must be tightly wrapped in foil. After three hours, the tanks are taken out, the foil is removed and replaced with dense lids. The most delicious for this recipe is beef stew.
Cooking from pork
Note that most housewives prefer this meat. This is easy to explain: homemade pork stew prepares faster, it turns out softer and does not require additional fat. However, not everyone likes fatty taste. We offer a way how to disguise it, and make meat more spicy. For 800 grams of meat, take 100 g of sour prunes, a large onion, laurel, pepper and a little fat. On fat, fry small cut pork and chopped onions - not much, just to a slight blush. Then add a couple of spoons of water and put prunes. All together stewed for about ten minutes, after which it is laid out on cans and covered with spices.
As the stew is packaged in hot form, it is necessary to place a spoon in the glass containers, otherwise they may burst. Evenly distributed meat juice is distributed, and the cans are placed open in the oven on a sheet covered with salt. First, the cabinet heats up to 110 degrees, and the stew is kept in it for 40 minutes. Then the temperature rises to 180, and the quenching lasts about 4 hours. Ready meat is sealed tightly, and the can is turned upside down until it cools. This preparation of stew is slightly longer than the previously described process, but the taste of the final product is subtle and delicate.
Stew with broth
For it, meat with bones is taken - or bones are purchased separately. Meat is sliced, poured with salt and left for half an hour to let the juice. Broth from broth bouillon with spices, strained and set aside for cooling. In sterile jars, meat is as thick as possible, it is poured with meat juice and broth. Then everything is as usual: the containers are put on a baking sheet in a cold oven, the temperature rises to 110 - and we wait. If your stew of chicken - will languish for an hour, from beef, pork or mutton - all two. A sign of readiness can be the boiling of liquid in the cans. The dishes are removed, closed, for about five minutes they are turned over to the lid, and then again to the bottom. You can immediately as it cools, but only to store - only in the cold. But the broth becomes like jelly or cold, so that their lovers get a double pleasure.
Chicken stew with onion
The most common of the chicken billets rolled in the same way as from other types of meat. However, there is a more interesting way of how to cook a stew at home from a bird. For example, peel it from the skin, cut into small pieces, grind the onion in mashed potatoes( if there is no blender - double pass through a meat grinder or grate), grind a coffee grinder with a pepper-pea. Slices of chicken are well mixed with onion puree and powder from spices and come across in half-liter clean jars( not up to the top). The stewing in the oven is at standard temperature, not under the lid. Somewhere in an hour you need to stop the jars with sterile lids. This stew from the chicken turns juicy and fragrant.
Happy owners of the multidark
Those who managed to get such a useful unit at home often do not know how to cook a stew at home with it. And there is nothing complicated in this. The first rule is that the pieces should be about the same size. The second - before the bookmark in the multivark they have to be dried. Third, water, oil, and fat are not added. The device is switched on for 5 hours in the quenching mode. At the end of this period, salt, pepper and lava leaves are introduced. The contents of the bowl are mixed and spread over sterilized jars. They can be prepared, among other things, also with the help of a multivark - a bowl for steam cooking is taken, jars are put in it, the steamer mode is turned on - and after ten minutes the containers are sterile. Further actions are standard: roll up, turn over, cool down the vessels in the cool.
The most correct way is in the autoclave
. Its use guarantees a very long storage( up to 10 years). Those who often use stew, must either buy, or assemble your machine. The product sterilized in it can completely preserve its taste and freshness even when stored not in the cold, and even without sealed corking. Note that the stew in the autoclave at the beginning is prepared by the usual method you like. For example, using an oven or multivark. Differences begin after the roll-up. First of all, the clogged banks do not cool in natural conditions, but wrap themselves up for a day or are placed in heat. Then they are put into the autoclave against each other. The container is filled with water so that even the lids from under it do not protrude. Then the autoclave closes and air is pumped up to a pressure of one and a half bar, after which it is placed on the fire until the pressure rises to four. When the desired figure is reached, the fire decreases and the contents of the autoclave are sterilized for four hours.
After such treatment, be sure - your stew will remain "as it was cooked yesterday" for many years.
