Dumplings with cherries are typical representatives of Slavic cuisine, although they are very similar to a variety of dishes of Chinese, Turkish, Italian cuisines. However, it is commonly believed that they belong to the Ukrainian one. You need to prepare them on a fresh test, you can also use yeast or dough on kefir. In order to make dough for cherry dumplings, it is necessary to prepare all the ingredients that it includes:
- flour( wheat) - 3 cups;
- 2 eggs;
- water( milk, kefir) - half a cup;
- salt - half a teaspoon.
So, water for the preparation of the dough should be taken ice. Even specially it can be cooled in the refrigerator. This will give the test a good stickiness, and it will not dry out quickly when cooking dumplings. Dough kneaded medium density, then sprinkle it with flour from above and leave for a while. Making the filling
In the meantime, we are preparing the stuffing for vareniki. Of course, in the season it is better to use fresh cherries, but in the cold season it can be replaced by frozen one. The berries should be cleaned of seeds, then sprinkle them with sugar, mix. Some prefer to sprinkle with sugar only every varenik. This is not forbidden, but with the first option it goes faster.
Then take our dough, roll it into a long tube, from which we gradually cut off into a piece the size of a large apricot. We roll each into a circle. The same operation can be done in another way: roll out a half-dough layer about 1-1.5 cm thick, and cut the circles with a glass. The rest then roll it back and make circles with a glass. So repeat until the test is fully used.
Exactly in the center of each circle carefully put the cherries with sugar, very carefully patching the edges, so that the juice in no way escaped from the future vareniki. If their edges are not tightly clipped, then there is a high probability of leakage of the filling in the process of cooking. In a saucepan with water, pour the salt to taste, pour in a little sunflower-seed oil and gently, when the water boils, we lower the dumplings with cherries.
Cook them until they surfaced. Usually it takes no more than five to six minutes. On the table vareniki with cherries should be served with cherry syrup, sour cream or butter.

You can also prepare dumplings with cherries for a couple, cook them for about 10 minutes - depending on the size.
